    Stuffed Hamburger "Swingers" 3-00

    List of Ingredients

    1 clove garlic -- minced
    1/4 cup yellow onion -- finely diced
    1/4 cup green pepper -- finely diced
    1/4 cup tomato -- finely diced
    1 teaspoon dried oregano
    1 pound ground beef -- lean
    1 egg
    3 Tablespoons olive oil -- extra virgin
    2 large yellow onion -- thinly sliced
    dash salt and pepper or to taste

    Recipe


    In a medium bowl combine the garlic, diced onion, tomato, gree pepper, and oregano. Add salt & pepper if desired, and mix well.

    Cover with plastic wrap and set aside.

    In a large bowl combine the ground beef, egg, and some salt & pepper if desired. Mix well, and shape into 8 four inch round, flat patties (8 - 4 inch round flat patties)

    Place a spoonful of the vegetable filling , (salsa,) in the center of one patty. Place another patty on top and press down firmly, then shape into a round carefully sealing the sides by pinching together.

    Repeast with the remaining patties.

    In a large non-stick skillet heat the olive oil over medium to high heat and saute the sliced onions until lightly browned.

    Transfer to a bowl and keep warm.

    Cook the burgers for about 5 minutes on each side, or until they're done the way you like them, (or until cooked medium well to well done,)

    Return the onions to the pan and heat.

    Serve immediately.

    Handle the hamburger patties gently and make sure they are well browned on the bottom before turning. These are tender burgers, so use a large turner to turn them over.

    Serving Ideas : These burgers and oven fries along with a beverage make for a fine lunch.

    NOTES : These are really good and kids like them too.
