    This is outstanding and the recipe will serve 6. That is if each person only eats one Potato. So I would make extra.

    List of Ingredients




    6 medium Baking Potatoes About 2 Lbs such as
    russet, round white, or yellow
    1/3 cup sliced green onions about 3
    1 to 2 cloves Garlic -- Minced
    2 Tablespoons Butter or margarine
    1 8 oz carton Dairy Sour Cream
    4 to 5 Tablespoons milk
    Snipped Fresh Parsley optional
    1/2 teaspoon salt
    1/4 teaspoon white pepper

    When you near ready to bake this dish, or to heat it through preheat the oven to 350°

    grease 1 1/2 Quart Casserole. Set Aside. If desired peel potatoes. Quarter Potatoes.

    Cook potatoes coverred, in boiling water for 20 to 25 minutes or until tender - drain

    Meanwhile in a small skillet cook the green onions and garlic in butter ot margarine until tender.

    Mash the drained potatoes with a potato masher or beat with an electric mixer on low speed.

    Add the onion mixture, sourcream, 1/2 teaspoon of salt and 1/4 teaspoon of pepper gradually. Beat in enough milk to make it smooth and fluffy.

    Transfer to prepared casserole, cover and chill up to 24 hours.

    To serve bake uncovered in a 350° oven for 45 to 50 Minutes or till heated through.

    NOTES : For best results cut the potatoes into 6 to 8 pieces and boil. they get cooked quicker that way, and also the pieces will fit into a potato ricer easier. Rice the potatoes instead of mashing them with a masher, then use the electric mixer to smooth them out then add the onions, salt, pepper, butter etc as you go using the mixer. They get the best this way - positively no lumps.
