    "Hot Spinach Dish" From the "Mayo Clinic Williams Sanoma Cookbook" Most people I know like it served Hot.


























    List of Ingredients


    • 1 teaspoon Olive oil
    • 2 Green Onions -- Chopped
    • 2 Garlic Cloves -- Minced
    • 1 1/4 Pounds Fresh Spinach Leaves, clean, dried, and stemmed
    • 1 1/2 Tablespoons Balsamic vinegar
    • 3 Tablespoons Grated Lemon Zest
    • 1 teaspoon Sesame Seeds -- Toasted


    Instructions


    1. In a large stockpot over medium heat, heat the Olive Oil. Add the Green Onions and Garlic and cook, Stirring until softened slightly, about 1 minute.
    2. Add the Spinach Leaves, packing them in. If you can't fit them in all at once, cover the pot for about 30 seconds, to wilt the Spinach a little , then add the remaining Spinach in batches.

    3. Cover the pot tightly and cook, stirring once or twice, until the Spinach is wilted and tender, but still bright green, 3 to 5 minutes.

    4. Remove from heat. Add the Vinegar and Lemon Zest and stir to combine.
    5. To serve, transfer to a platter. Sprinkle with the Sesame Seeds. Serve Hot or Cold.
