    Carrot Ginger Muffins

    Vegetable Cooking Spray

    1 1/4 cups all-purpose flour
    1/2 cup whole wheat flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground cinnamon
    1/4 teaspoon salt
    1/2 cup raisin
    1/4 cup crystallized ginger
    2 egg
    1 cup canned pumpkin puree
    1/2 cup nonfat milk
    3/4 cup packed brown sugar
    1 teaspoon vegetable oil
    2 carrot -- grated (about 1 cup)

    Recipe


    Preheat oven to 400° - lightly coat a 12 cup muffin pan with vegetable oil cooking spray.

    In a large bowl stir together the next seven ingredients.

    Mix in Raisins and Crystallised Ginger; set aside.

    In another bowl beast eggs slightly with a fork and add pumpkin, milk, brown sugar, vegetable oil, and carrots.

    Pour into flour mixture and stir until blended.

    spoon into muffin cups. Bake 18 to 20 Minutes or until golden and a tooth pick inserted in the center comes out clean.

    remove muffins from pan, and cool on a wire rack.
