    Biscuits, Cheddar and Bacon

    List of Ingredients

    2 1/2 C flour, sifted
    1 T baking powder
    1/2 tsp baking soda
    3/4 tsp salt
    6 T butter, cut up
    1/2 C crumbled bacon
    1/2 C shredded new york sharp cheddar
    1 scallion, chopped
    1 T parsley, chopped
    1 1/4 C buttermilk
    1 egg, lightly beaten (optional)

    Recipe

    Sift together dry ingredients. Cut in butter to coarse crumb.

    Add next 4 ingredients, tossing to mix. Stir in buttermilk to just moisten.

    Gently knead on a floured board. Pat out to 1 inch thickness. Cut with 2 3/4 inch cutter. Place 1 1/2 inches apart. Let rest 15 minutes. Brush tops with egg. (opt). Garnish with a parsley leaf if desired. Bake at 425 for 25 minutes or until golden brown.

    Var: 2 C white whole wheat flour and 1/2 C cornstarch.
