    Preheat oven to 425 degrees F.

    List of Ingredients




    3 strips bacon
    1 C flour
    1 tsp baking powder
    1 tsp salt
    3/4 tsp baking soda
    1 C corn meal
    2 T brown sugar
    2 beaten eggs
    1 1/2 C buttermilk
    1/2 C drained, crushed pineapple

    Recipe



    Fry bacon in hot fry pan. Reserve 1/4 cup of the drippings. Crumble the bacon.

    Combine dry ingredients. Combine eggs, buttermilk, crushed pineapple and bacon drippings. Add all at once to dry ingredients, mixing until blended. Top with crumbled bacon. Bake for 15-20 minutes.
