    Pancakes, Corn Meal

    List of Ingredients

    1 C flour
    3 tsp baking powder
    1 1/2 tsp salt
    1 C cornmeal
    2 eggs, beaten
    2 C milk
    1/4 C salad oil or melted fat

    Recipe

    Sift flour, measure, add baking powder and salt, sift into a bowl. Mix in cornmeal.
    Combine eggs and milk. Stir into cornmeal mixture then add oil. Bake on hot griddle. Makes 16
    Serve with honey or syrup.
    Var; 1 C leftover finely chopped ham may be added to batter.
