    Serves 6

    List of Ingredients




    1/2 C + 1 T flour
    1/2 tsp baking powder
    1/4 tsp salt
    6 large eggs (separated)
    1 C sugar, divided
    1/2 C + 1 T milk
    1 tsp vanilla
    1/4 C lemon juice
    3 C finely diced apples
    4 T butter
    1 tsp cinnamon

    Recipe



    In a large bowl, sift the flour, baking powder and salt. Set aside

    Preheat oven to 375 degrees F.

    Beat egg whites until foamy. Gradually add 3/4 cup sugar and beat until stiff peaks form. Set aside

    Beat egg yolks until thickened. Beat in milk and vanilla. Beat in the reserved flour mixture, until smooth.

    Pare the apples, dice them finely and sprinkle with the lemon juice, stirring to well coat them.

    Combine the remaining 1/4 cup sugar with the cinnamon.

    Fold the egg white mixture and the apple mixture together and then into the flour mixture to well combine.

    In a 12-14 inch skillet, melt butter. Pour in the pancake batter and sprinkle with the cinnamon sugar. Place the skillet into the preheated oven and bake at 375 degrees F for 15-20 minutes or until it is set, like a custard.
    Cut into wedges and serve with extra lemon juice and sugar, if desired.
