List of Ingredients
2 pkgs yeast
4 C water (105-115 degrees F.)
2 lrg eggs
1/4 C honey
2 T salt
1 C raw wheatgerm
1 C pwd milk
1 T soya flour
1 T rice polish
12 C unbleached hard wheat flour (or whole wheat)
Recipe
Dissolve yeast in the water in a bread bowl. Add honey and 2 C flour. Let stand until sponge forms. Mix powdered milk with 2 cups flour and stir well. Add the remaining flour-milk mixture and everything else except the remaining flour to the sponge and beat well. Gradually add the remaining flour until you have a stiff dough. Turn out on a well floured board and knead 10 minutes. Turn into greased bowl, cover and let rise. Punch down and let rise again until doubled. Remove dough from bowl. Divide into four parts and place in greased loaf pans. Let rise to the top of pans. Place in cold oven. Turn temperature to 375 degrees F. Bake 40 minutes. Cool on racks.
Whole wheat flour can be substituted for some or all of the unbleached flour.
