    Mom's cottage cheese pancakes

    makes thirty to thirty five, three and one half inch pancakes


    List of Ingredients


    • one cup cottage cheese
    • three quarter cup all purpose flour
    • one half teaspoon salt
    • six eggs
    • one quarter cup milk
    • one quarter cup oil
    • oil for pan


    Instructions


    1. Place cottage cheese, flour, salt, eggs and oil in blender and whirl until well combined and smooth, about one to two minutes.
    2. Heat a large skillet on medium heat. Add two teaspoons oil, or use nonstick spray. tilt skillet to cover with oil. Use a one quarter cup measure for each pancake. Cook about two minutes or until pancakes are dry around edges and golden brown and bubbles start to break on surface.
    3. Turn and cook until bottom is golden brown.
