    Flatbread, Onion Pocket Bread

    Recipe Introduction

    Yield=6 pockets (Pitas) preheat oven to 500 degrees F. (260 C)

    List of Ingredients

    1 1/3 C warm water
    1 T salad oil
    3-4 C all purpose flour
    1 T onion soup mix
    1 pkg active dry yeast
    1 tsp salt
    1/4 tsp sugar

    Recipe

    Assemble doughmaker [dough hooks] on the Kitchen Center, (or whatever brand of Mixer you are using). Heat water to 120 degree F. In the small bowl place 1 1/2 cups of flour, yeast, salt and sugar. Add water and oil and mix with doughmaker at # 12 (#10( for 3 minutes. Gradually add enough remaining flour to make a stiff dough.Knead with doughmaker about 4 minutes until smooth and satiny. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch down and divide into 6 equal parts. Shape into balls and let rise 30 minutes. Sprinkle bread board with corn meal, roll out each ball to one eighth inch thickness. Place on opposite corners of cookie sheets. Let rise for 30 minutes. Preheat oven to500 degrees F. and bake until puffed and brown, 10-15 minutes. Cool and cut in half and fill with your favorite filling.
