Coffee Cake, Blueberry-buttermilk

Recipe Introduction

Preheat oven to 350 degrees F.

List of Ingredients

2 1/2 C flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/4 C sugar
10 T butter, room temperature
2 eggs
1 tsp rum extract
1 1/4 C buttermilk
1 pint blueberries


Recipe

Sift together dry ingredients. Cream butter and sugar. Combine liquid ingredients. Alternately combine the liquid ingredients and dry ingredients into the butter mixture. Stir only until there are no lumps and batter is fairly smooth. Stir in the berries. Grease and flour a 9x13 pan and bake 35-40 minutes or until a toothpick inserted in the center comes out clean.
Before baking add a struesel topping, or not.
