    Baked Potato, Breakfast

    Recipe Introduction

    Serves 2.

    List of Ingredients

    2 russet potatoes
    1 C cubed corned beef, (canned OK)
    2 small handfuls of frozen peas, (or choice of vegetable)
    Butter
    1 C Holland Parrano Cheese, grated
    salt
    cracked black pepper
    sour cream, (optional)
    parsley for garnish
    paprika for garnish

    Recipe

    Bake the potatoes, or micro-wave them for about 6+minutes. slice from end to end, but not through. Push ends toward each other to open the cut and fluff the potato. Add the corned beef, peas, butter, salt and pepper and fluff with a fork to mix the ingredients into the potato. Top with the grated cheese and let it melt a little. Add a dollop of sour cream to each if desired and garnishes to taste.
