    Ham And Potatoes, Country

    Recipe Introduction

    Serves 4

    List of Ingredients

    1 med size onion, chopped (1/2 C)
    4 tblsp butter, or margerine
    2 C diced baked ham
    4 C diced pared raw potatoes
    2 tblsp cream

    Recipe

    Saute onion in 2 tablespoons butter until soft in a large fry pan; remove and mix with ham in a medium sized bowl.
    Place potatoes and remaining butter in same fry pan; Cover. Cook slowly. without stirring, 20 minutes. Mash with a fork and shape into a large patty; spoon ham mixture in a layer on top, then press into potatoes; drizzle with cream. Cover again. Cook slowly 25 minutes longer, or until a rich brown crust forms. Cut patty into quarters; lift onto heated serving plates.
