    Spanish Tortilla

    List of Ingredients


    • 1 small red potatoe
    • 1 T butter, or olive oil
    • 1/2 tsp oregano
    • 1/2 tsp rosemary, crush in palm of hand to break up
    • 1/4 tsp powdered thyme
    • 1 link italian sausage. about 6 inches long
    • 4-6 capers, chopped
    • 6 eggs
    • salt and pepper
    • 1/2 C pepper jack cheese
    • 2-3 T milk


    Instructions


    1. Put the butter in a small, hot, fry pan. Slice potatoes almost paper thin and cover the bottom of the pan with them. Cook until tender and begining to brown. Add the seasonings and capers. Add sliced sausagees over.(unless you use chorizo).

    2. Beat the eggs as for scambled eggs and add the crumbled chorizo if using to the eggs. Pour the eggs over the undisturbed potatoes. Top with the cheese and cook until eggs are set. This is not like an omelet where you lift and let the eggs run under. Cut into wedges to serve. Garnish if desired with scallions and sour cream, or what ever suits your taste buds that day.



    Final Comments


    This is a base recipe, Add other ingredients you desire. Sometimes I use chopped bell pepper, or hot peppers. Chopped olives, pimiento or whatever is in the fridge that sounds good.
