    HASH, TURKEY

    Recipe Introduction

    Serves 4-6.

    List of Ingredients

    1 1/2 pounds leftover potatoes
    1 pound diced, leftover beets (optional)
    2 bay leaves
    6 ounces bacon, cut crosswise into 1/2 inch pieces
    1 onion, cut up or chopped
    garlic, minced or pressed
    2 tsp chopped fresh thyme
    2-3 C diced turkey
    1/2 C whipping cream or half and half
    2 T chopped fresh parsley
    salt and pepper

    Recipe

    Cook the bacon 7-9 minutes, and drain off most of the fat. Reserve bacon. Add onion and cook 5-7 minutes. Add garlic and thyme and cook about half a minute. Add the turkey, potatoes and optional beets, and brown 4-5 minutes. turn the hash with a spatula and continue cooking, stirring occasionally, until well browned and heated through. Return bacon to pan and add parsley. Season to taste with salt and pepper. drizzle with the cream and stir occasionally until heated through. If you like you may add a little whole grain mustard with the parsley, or a few gratings of nutmeg.
