Achiote seeds are also known as Annatto seed.
Serves 2.
List of Ingredients
2 tablespoons olive oil
1/2 tsp achiote seeds
2 cloves garlic, minced
3/4 cup minced onion
1 small tomato chopped (roma)
2 C leftover rice
1 tsp minced fresh jalapeno chilies
handful of fresh chopped cilantro
About 1/2 teaspoon salt
Pepper
2 eggs
red pepper sauce
lime wedges

In a heavy skillet over medium heat, put the seeds in the oil,You may at this point add the jalapenos, and as the temperature rises the oil becomes redish. Strain out the seeds and peppers.
In a 2- to 3-quart pan over medium heat, frequently stir onion and garlic in oil until vegetables are limp and beginning to brown, 5 to 8 minutes. Add rice, tomato and chilies (if not previously used); stir often until rice is opaque, 2 to 3 minutes.
2. Stir in cilantro and 1/2 teaspoon salt. Bring to heat over high heat, cover, reduce heat, and cook until rice is well oiled.
3. Stir with a fork to distribute tomatoes evenly, adjust seasonings. Place rice on 2 plates. Fry the eggs in the same pan. And place on top of the rice. add pepper sauce to taste and a squeeze or 2 of lime juice. Serve lime wedges on the side of the plates.
Var; You can use salsa in place of pepper sauce if desired.
