    • 1/2 C unsalted butter, at room temperature
    • 1 shallot (or 2 cloves garlic) finely minced
    • Grated or minced zest of 1 lemon
    • Grated or minced zest of 1/2 orange
    • 1 T dried herbs; thyme, rosemary or oregano
    • 1/2 tsp bourbon, brandy or cognac
    • salt to taste


    Instructions


    1. beat ingredients together. Place in a ramekin or crock, or roll into a tight cylinder on waxed paper and enclose in plastic wrap. Chill for up to 2 weeks or freeze for up to 6 months.
