    Crumb Cake, Buttermilk

    List of Ingredients


    • 1/2 C walnuts
    • 1/2 C raisins
    • 2 C sifted all-pupose flour
    • 1 C sugar
    • 1 tsp salt
    • 1 tsp cinnamon
    • 1/4 tsp cloves
    • 1/2 tsp nutmeg
    • 3/4 C shortening, part butter for flavor
    • 1 tsp baking soda
    • 1 C buttermilk
    • 1 egg
    • 2/3 C thick jam or marmalade


    Instructions


    1. Chop walnuts and raisins. Resift flour with sugar, salt, cinnamon, cloves and nutmeg into mixing bowl.

    2. Add shortening and blend together until mixture resembles fine crumbs. Measure out one cup of the crumbs and stir in about half the nuts. Set aside

    3. Stir soda into buttermilk. immediately add to remaining crumbs in bowl, along with egg.Beat until well blended. Stir in remaining nuts and raisins. Turn batter into two greased and floured 8 inch layer cake pans

    4. Sprinkle reserved crumbs evenly over top of each layer. bake at 350 degrees F. about 35 minutes, or until cake tests done.

    5. Remove from oven and let cool a few minutes before turning out on wire racks to cool.

    6. Put layers together with jam crumb side up. Let stand 30 minutes to set.
