    Upside-Down Cake, Quick Peach

    List of Ingredients

    3 T brown sugar
    3 T butter
    1-2 large peaches, enough to cover bottom of pan
    3 egg yolks
    1/2 C granulated sugar
    1/4 C boiling water
    1/4 tsp salt
    1 tsp baking powder
    3/4 C cake flour
    1/2 tsp flavoring (brandy is a good choice)

    Recipe

    Melt 3 T butter and 3 T brown sugar in bottom of a 8x8 cake pan. Arrange peache Slices in one layer to cover bottom of pan.
    Sift together flour, salt and baking powder. Beat 3 egg yolks 2 minutes at high speed or until thick and light. Continue beating and add granulated sugar gradually, 1 minute longer. Add hot water, mix a few seconds. Add flour a little at a time. Beat until thoroughly mixed. Bake 25-30 minutes in 350 degree oven. Let cool a few minutes, then turn out on plate or rack.
