    2 T butter
    3/4 C evaporated milk
    2 (1 oz) cakes chocolate, cut up
    2 C beet sugar
    1 tsp vanilla extract
    3/4 C broken nut meats

    Recipe



    Melt butter in a 2 quart saucepan. use rubber spatula to bring it up around sides of pan, gresing well. Pour milk into pan: add chocolate and heat slowly, stirring constantly until chocolate is melted and mixture is smooth. Add sugar and stir well to dissolve. Cover pan and bring mixture to boil slowly; cook about 1 minute or until sugar crystals are melted down from the sides of the pan. Remove cover and continue gentle cooking without stirring to a soft ball stage. Let stand without moving until candy is 110 degrees, or bottom of pan is barely warm to the hand. (About 1 hour). Add vanilla and nutmeats; stir-beat;until it becomes creamy, starts to thicken, and losses its gloss, (8-10 minutes). pour into a buttered 8 inch square pan, or box lined with waxed paper. Cut into pieces while still warm.
    if fudge becomes a little too stiff to mold nicely, turn it out on a hard surface and knead it well with the hands. It will become very creamy. Shape into a roll or pat into a greased pan.
    Makes 1 pound.
