    A stretched candy.

    List of Ingredients




    Juice of 1 lemon
    rind of 1/2 lemon
    1 1/2 pounds sugar
    2 oz butter
    1 1/2 teacups water

    Recipe



    Squeeze the juice of the lemon into a bowl and set aside.
    Boil on a quick fire, the sugar, butter, and water, together with the lemon rind, constantly stirring, and when it reaches the hard crack stage remove from heat till boiling has stopped, and then stir in the juice of the lemon. Butter a plate and pour it about an inch thick.
    When cooled enough to handle, remove lemon peel. Pull the candy until white. Stretch into ropes and mark every four inches with a knife. Break at the scored marks and keep in airtight container.
