    6 oz fruit pectin
    3/4 cup orange juice (Juice from canned mandarin oranges)
    1/2 tsp baking soda
    1 1/4 cups sugar
    1 cup light corn syrup
    2 tsp orange extract
    2 drops red food coloring
    3 drops yellow food color




    Recipe



    Cut oranges in half, reserving the peels. You can candy the peels if desired, or use as is. (use the oranges elsewhere.)

    Mix pectin, water and baking soda in medium saucepan (mixture will be foamy).
    Combine 1 cup of the sugar and the corn syrup in large saucepan.
    Cook both mixtures on high heat 4 minutes, or until foam has thinned from pectin mixture and sugar mixture comes to a full rolling boil, stirring mixtures in both saucepans frequently.
    Gradually add pectin mixture to boiling sugar mixture, stirring constantly.
    Boil 1 minute, stirring constantly.
    Remove from heat.
    Stir in extract and food coloring.
    Place the orange peels on their sides, cut side up, on cookie sheets, with beans on the sheet to hold the peels in place, scoot some beans to the side to make wells for the peels.
    Pour the hot candy into the peels.
    Let stand at room temperature overnight or until candy is cool and firm. Using a very sharp or serrated knife, cut into wedges to resemble pieces of oranges, peel and all. Dip the knife in water from time to time to prevent sticking.
    Sprinkle remaining 1/4 cup sugar into a shallow bowl. More if needed.
    Press the 2 candy sides of the wedges into the sugar to coat well.
    Place in single layer on wire racks and let set, uncovered, at room temperature overnight or until thoroughly dry. Store in airtight containers at room temperature.
