    Ketchup-Tomato Catsup

    List of Ingredients

    1 and a half teaspoons whole cloves
    1 and a half teaspoons broken cinnamon stick
    1 teaspoon celery seed
    1 cup white vinegar
    eight pounds of tomatoes (about twenty five)
    1 tablespoon chopped onion
    1 half teaspoon red pepper
    1 cup sugar
    1 teaspoon salt

    Recipe

    In a pan, cover first four ingredients and heat to boiling. Remove from heat.
    Mash the tomatoes and add onion and red pepper. Cook tomatoes fifteen minutes, stirring occasionally. Put through food mill or coarse sieve. Add sugar and simmer until reduced by half. (forty five to sixty minutes). Strain vinegar and spices directly into tomatoes. Add salt and simmer again to desired consistency, (thirty to forty minutes),stirring frequently.
    Seal in pint jars, ten to fifteen minutes.
    Makes two pints.

    Var;
    Chili ketchup
    For each 2 cups of tomatoes use;
    1 T chili powder
    4 garlic cloves
    Substitute red wine vinegar for the white vinegar
    1/4 C chopped onion
    1 1/2 tsp cumin, or to taste
    1/4 each, red and green bell pepper
    1/4 tsp ginger
    1/4 tsp red pepper flakes
    1/4 C packed brown sugar
    1/4 tsp salt
    I don't recommend this variation for canning, but rather as a condiment.(only because I haven't tried it). can be frozen.
