    Serves 6.

    List of Ingredients




    3 slices bacon or fat smoked beef
    2 1/2 pounds sliced beef liver
    2 T flour
    1 small onion, diced
    1 C diced celery
    3 small carrots, sliced
    1/2 C hot beef stock
    1 tsp salt

    Recipe



    Fry bacon crisp and remove from skillet. Dredge liver with flour and brown slowly with onion in the hot bacon fat. Place vegetables in casserole, arrange liver over and top with fried bacon cut in 1 inch pieces. Add beef stock and salt. Cover and cook in slow oven (300 degrees F.) 45-65 minutes.
