    Rice, Chinese Beef and

    List of Ingredients

    1 1/3 C raw, long grain, brown rice
    1/4 C oil
    3 C water
    2 beef bouillon cubes
    1 T plus 1 tsp soy sauce
    1 Medium onions, chopped
    4 stalks celery, chopped
    2 bell peppers, chopped
    3 C diced, cooked beef

    Recipe

    In skillet, heat oil to medium and add the rice, quickly stir rice around as it parches to an almost wheat color. Do not brown or it will be burned and not cook right. Add salt, the 3 cups of water, heated to a boil, bouillon and soy sauce. Cover with a tight fitting lid. (glass lids with a vent in them won't work). Simmer 20 minutes. Stir in onion, celery, bell pepper and beef. Cover tightly again and simmer 10 minutes or until liquid is absorbed and rice is tender.
