    Paper-wrapped Chicken

    List of Ingredients

    1 breast of chicken
    2 slices bacon
    section of cucumber
    2 spring onion
    1 T soy sauce
    1 T sherry
    1 tsp sugar
    pepper to taste
    oil for deep fat frying

    Recipe

    Cut cellophane paper into pieces 8x6 inches. Make 12.
    Cut chicken into 12 strips 2x3 inches. cut bacon diagonally across into 12 pieces. Cut cucumber into similar pieces, 2x3 inches.
    Add soy sauce,sherry and sugar to the chicken and marinate for 10 minutes.
    Place a cellophane on work space and put a piece of chicken just off of the center on the long side. Add a bacon piece, onion and cucumber. Roll up in a loose roll and just before the top 2 inches, press down to flatten the roll. Turn in the 2 sides and fold down the 2 inch flap tucking it under the two side folds. Turn it over and weight it with a plate to keep it in place.
    Deep fat fry 6 at a time, in a wire basket, fir 1 1/2 minutes. Remove and let rest a couple of minutes. Do next 6 as those rest, and repeat the rest period. Now put all envelopes in the basket and fry 1 1/2 minutes or until chicken is done.
    Drain them well and serve hot to be eaten with chopsticks.
    You can use aluminum foil if desired in place of paper.
    If you add a piece of conch or abalone the size of the chicken, increase the time to 2 minutes for frying.
