    2 medium red onions, sliced to desired thickness
    2-3 paper thin slices of lime
    3/4 C white wine vinegar
    1/4 C white vinegar
    2 T sugar
    1 tsp salt
    1 tsp peppercorn
    1 tsp whole coriander
    1/4 C fresh lime juice
    1/2 C water

    Recipe



    Boil 4 cups of water, and submerge the sliced onions for 30 seconds. Drain in a colander. Place limes and onions into jars, filling to the tops with out packing.

    Combine next 6 ingredients in a medium saucepan. Cook over high, stirring, about 3 minutes to dissolve sugar and salt. Add lime juice. Add hot water to fill if needed. Cool and then chill in fridge. Good to eat now, and good for 5-7 days.
