    Catsup, Tomato Garlic

    List of Ingredients

    4 #2 cans tomatoes or 4 pounds ripe tomatoes
    2 tablespoons salt
    1 cup sugar
    1/2 teaspoon cayenne
    2 tablespoons powdered ginger
    6 garlic cloves, chopped*
    1/4 teaspoon dry mustard

    Recipe

    Combine all ingredients in agate or enamel kettle. Boil slowly, stirring frequently with enamel spoon, until mixture is reduced to about half, about 1 hour or longer.

    Strain mixture through sieve, reheat just to boiling. Seal at once in hot sterile glass jars.

    Makes about 3 pints.

    For most tastes, the amount of garlic should be reduced to 1 or 2 buds. Also, if garlic and spices are tied in a cheesecloth bag and removed before catsup is strained, the color of the finished catsup will be better.

    Variation: Omit garlic; add 3 medium-sized green peppers, seeds and fibers removed and 3 medium-sized onions, peeled, all chopped very fine. Then cook.
