    1/2 C raisins
    1/2 C dessert wine, Sagrantino(red),Vin Santo (white) or ice wine
    1 T butter
    2 T semolina flour
    2 1/2 C unbleached all-purpose flour
    1/2 C sugar
    1/2 C very fruity olive oil
    1 tsp anise seeds

    Recipe

    Soak the raisins in the wine for 30 minutes. butter 2 cookie sheets and sprinkle each with semolina flour. Set aside. Preheat oven to 350 degrees F.
    Drain the raisins, reserving the wine. Pat dry and coat with 1 tablespoon of the flour. Pour the wine into a measuring cup and add more to make 1/2 cup.
    Combine the rest of the dry ingredients in a bowl. Make a well in this and add wine, oil, anise seeds, and raisins. with a fork mix into the dry, slowly bringing in flour from the sides of the well. When almost fully combined, pour the contents onto a board and knead until until it just comes together, (the dough will be crumbly).
    Roll the dough into 2 long rolls about 1 1/2 inches round. You may need to pinch the dough together if it is still crumbly. Cut crosswise into 48 slices. Place the cookies on the baking sheets and turn over once so that some of the semolina flour clings to both sides of the cookies. Bake for 15-20 minutes, or until lightly browned. Transfer to a cooling rack. These keep a long time in an airtight container.
