    Mayor Cake-(braid)

    Source of Recipe

    Denmark

    Recipe Introduction

Preheat oven to 400 degrees F.

    List of Ingredients

1 recipe, "Pastry to make danishes" (base dough). use about 6 ounces of dough.
    Mayor paste for filling
    Vanilla creme for filling
    Egg wash
    Almonds,chopped or sliced

    Recipe

Roll dough out on a floured surface about 1/2 inch thick, in a 10x12 inch rectangle. Cut into strips 4 inches wide, or
roll dough to a 30x9-inch strip. cut lengthwise into 3 strips 10 inches long.
Use a portion of mayor paste and roll in long ropes, 1/2 inch in diameter. Place a strip down the center of each strip of dough.
Spread Vanilla creme on one side of each strip only.
Fold edges of strips over filling, starting with the vanilla creme side first, folding it over filling, fold other side over that so you end up with a layer of dough on the bottom, filling and 2 layers of dough on top. Enclose filling completely. Now flip the strip so that the bottom now becomes the top to ensure filling does not escape.
Press ends of the 3 filled strips together, braid loosely, and press other ends together.
place in a metal collar, 9 inches in diameter, on ungreased cookie sheet,(or use a foil collar too keep the mayor cake from spreading too much).
Let rise in a warm place 45 minutes, or until double in bulk.
Brush with egg glaze and sprinkle generously with almonds.
Place in a hot oven 400° F. lower heat immediately to 350°.
Bake 40 minutes. Cool on rack.
    Cut into wedges to serve.
