1 1/2 pounds pitted frozen cherries, thawed
1/4 C sugar,+ 1-2 T (divided)
pinch powdered star anise
pinch cinnamon
1 cup heavy whipping cream
1/2 C sour cream
Recipe
Place cherries, ¼ cup sugar, star anise and cinnamon into a food processor and puree until smooth. Chill puree in the refrigerator for about 20 minutes
Using a whisk attachment on your electric mixer, whip heavy cream until soft peaks form. Add in the 1 - 2 tablespoons of sugar and continue to whisk just until soft peaks form. then fold in the sour cream until fluffy.
Using a rubber spatula, gently fold the cherry puree into the whipped cream. Don’t over combine the puree, it’s best to allow some red streaks to remain
Pour the Cherry Fool into four decorative glasses . Cover each glass with aluminum foil and refrigerate for up to 4 hours
