Minted cucumber-buttermilk dressing

List of Ingredients
1 medium cucumber, peeled, seeded and chopped
1 1/2 C buttermilk
1 medium clove garlic, minced
1/2 tsp salt
3 green onions, chopped
2 T minced fresh mint leaves
2 T red wine vinegar
1-2 T light colored honey
Recipe
Combine in a food processer or blender and puree until smooth. Will keep up to 2 weeks, chilled, in tightly closed container. Stir before using.
