    Serves 6.

    List of Ingredients




    1 medium onion, sliced
    1 small bell pepper, chopped
    2 slices bacon diced
    1/2 pound mushrooms, sliced
    2 C cooked tomatoes
    1/2 tsp sugar
    1/4 tsp salt
    6 eggs
    6 T milk
    4 T butter
    1/2 tsp lemon juice
    1 tsp dry mustard
    1 tsp chili powder
    1/2 tsp salt

    Recipe



    saute onion, pepper and bacon until bacon is browned. Add next 5 ingredients and cook slowly for 10 minutes. Meanwhile beat eggs and add milk. Melt butter in a double boiler and stir in lemon juice, mustard, chili powder, and salt. Add eggs and cook over hot water until the eggs are creamy, stirring constantly. Serve vegetables on crisp waffles with the egg sauce on top. garnish with parsley if desired.
