8 eggs
2 tablespoons cream
1 T honey
1/2 cup corn
1/4 C cooked amaranth
4-6 medium mushrooms, sliced
1 C summer squash, diced
1 /4 C chili sauce
6 tortillas
Recipe
Beat the eggs, whisk in cream to which honey has been added.
Scramble over medium low heat, stirring occasionally, until the eggs are set.
Saute mushrooms until browned. Add squash and cook 4-5 minutes. Add the corn and amaranth. Cook 3 minutes.
Add chili sauce.
Place some scrambled egg on each tortilla, then add mushroom mixture to each tortilla that has been cooked until soft and pliable.
Roll up as for a burrito and serve hot. Garnish as desired.
