    List of Ingredients


    • 2 C unsweetened pineapple juice
    • 2 C sugar
    • 4 whole eggs
    • 1 egg yolk
    • 1/8 tsp salt
    • Caramel sauce ingredients;
    • 2 C sugar, divided
    • 1/4 C sifted flour
    • 2 1/2 C boiling water, divided
    • 2 T butter


    Instructions


    1. Combine sugar and juice in saucepan. Stir over medium heat until sugar dissolves. Remove from heat.
    2. Beat eggs, egg yolk and salt together slightly. Add to juice mixture. Strain into one and one half quart casserole dish and bake in water bath (Bain marie) at three hundred and twenty five degrees for one and one half hours.
    3. Caramel sauce;
      Melt one cup sugar in heavy skillet, with the back of a wooden spoon. Gently keep sugar moving toward center of skillet, until sugar is completely melted, and golden brown. Remove from heat. Gradually add one half cup of boiling water, return to low heat and continue to stir, until bubbles are dime size. set aside.
    4. Sift together in a saucepan, one cup sugar and the quarter cup flour. Gradually add two cups boiling water, stirring constantly. remove from heat and blend in butter.
    5. return to low heat, stirring constantly. Blend in the caramel syrup. Cool slightly and serve over the custard.
