CREAM OF ONION SOUP

List of Ingredients
- 3-4 medium onions, thinly sliced
- 3 T butter, melted
- 2 T flour
- 1 C boiling water
- 1 quart milk, scalded
- 1/2 C evaporated milk, scalded
- salt and pepper
- paprika
- Italian grated cheese
Instructions
- Simmer onions in butter until a light tan color. blend in flour, add water and simmer, stirring constatly, until onions are tender. Stir in milk and evaporated milk and simmer gently for 10 minutes, stirring constatly.
- Season to taste; simmer a moment more, then serve topped by a light sprinkling of cheese.
