    Excellent for enchiladas.

    List of Ingredients




    1 tsp coriander seed
    2 T cumin seed
    14 dried guajillo chilies, seeded
    4 dried ancho chilies, seeded
    3 dried morita chilies
    4 C vegetable or tomato bouillon
    Garlic cloves, to taste (start with 4 and add more as desired)
    2 T tomato paste
    1 tsp Mexican oregano

    Recipe



    Toast the coriander seeds over medium heat, swirling often, until fragrant, (2 minutes). For the last half minute of cooking, add the cumin. Let cool.
    Finely grind seeds in a mortar and pestle.
    Bring the chilies to a boil over medium high heat. Cover, remove from heat. Let sit for half an hour. Puree with the rest of ingredients until smooth for 2 minutes.
