    Recipe Introduction


    Preheat oven to 350 degrees F.


    List of Ingredients


    • 5 C corn kernels, divided
    • 2 eggs
    • 1/2 to 3/4 C milk
    • 1 T butter
    • 1 C chopped green onions
    • 4 oz diced green chilies
    • 2 large ripe tomatoes, seed and dice
    • 2 tsp paprika
    • 1/4 tsp cayenne pepper
    • salt and pepper to taste
    • 1/4 C grated parmesan cheese


    Instructions


    1. Grese a 3 quart baking dish. Put 2 and one half cups of corn, eggs and milk in blender and puree until smooth. Set aside.
    2. Melt butter in a large skillet over medium heat. Add onion and green chiles, saute 5 minutes or until soft. Add tomatoes, paprika and one quarter teaspoon cayennepepper, and cook 8-10 minutes, Add corn mixture, the remaining 2 1/2 cups corn, salt and pepper to taste. Cook 2 minutes. Pour into baking dish and sprinkle with cheese.
