    Recipe Introduction

    Handle carefully, overworking the dough will produce a bread that�s tough. Butter should be cold. dough is patted into a circle and cut into quarters.

    List of Ingredients

    2 cups flour
    1 teaspoons baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/3 cup cold unsalted butter, cut into 8 pieces
    1 eggs
    1 tablespoon sugar or honey
    1 cup sour cream or half-and-half, room temperature


    Recipe

    In a medium-size bowl, combine flour, Sugar, baking powder, baking soda, and salt. Add butter and use a pastry cutter or 2 knives to cut butter into flour mixture. In a medium-size bowl, lightly whisk eggs, honey, if using and sour cream or half-and-half until blended. Add to flour mixture. Stir only until dry ingredients are moistened. (Think muffins here)
    Turn out dough onto a well floured surface. Flour hands. Squeeze dough until it just holds together. Pat into a circle about 1/2 inch thick. Lightly dust tops of circles with flour. Cut into quarters. Preheat an un-greased griddle over medium-high heat, Bake 13 minutes, when bottoms are lightly browned and scones have risen slightly, turn and brown the other side 7 to 10 minutes. Serve hot.
    You may also cut into small rounds and bake 15 minutes total time.
