Glazed Orange Coconut Cake

Preheat oven to 350 degrees F.
Grease and flour a Bundt pan
Serves 20
List of Ingredients
2 1/2 C all purpose flour
1 1/2 C sugar
3/4 C finely shredded coconut, unsweetened
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 C coconut milk
1/2 C oil
2 eggs
1 tsp vanilla
1 C fresh orange juice (4-5 oranges)
1 T finely grated orange peel
Recipe
Combine next 6 ingredients
Combine coconut milk through orange peel.
Pour into dry ingredients and mix until smooth. Pour into the floured Bundt pan.
Bake 35-40 minutes. Cool completely before removing from pan.
Glaze;
2 C powdered sugar
1/4 C orange juice (about 1 orange)
toasted coconut chips.
Whisk together powdered sugar and orange juice. Pour this glaze over the cake. Sprinkle the top with the coconut chips.
