    Hungarian Layered Mushroom Pancakes

    For a polish variation omit the paprika and use dill or parsley.

    List of Ingredients




    Pancake;
    2 C flour
    1 tsp salt
    3 lrg eggs
    2 C milk

    Filling;
    1 pound chopped, fresh mushrooms
    3 T butter
    1 tsp paprika
    1 C sour cream
    1 lrg egg, slightly beaten
    salt
    pepper

    Parmesan cheese for top

    Recipe



    Saute mushrooms in butter for 4 minutes. Add paprika and cook 1 minute. Stir in sour cream, egg, salt and pepper. Remove from heat.

    Pancakes;
    Blend ingredients with a wire whisk. Grease a 7-8 inch skillet. Pour about 1/4 cup batter in and tilt as for crepes. Fry both sides.
    Spread the pancakes with filling and stack all 10 in a baking dish. Dot with butter and sprinkle with Parmesan cheese. Place in a 350 degree F. oven for 20 minutes. Cut into wedges and serve.
