(Karpalo Kusseli) Pudding

- 1 C sugar
- 1/4 C potato starch flour
- 1 quart cranberry juice cocktail
- 2 C shredded summer squash or zucchini
- 1 C whipping cream
Instructions
- Boil squash, juice and sugar for 5 minutes, or so until squash is cooked.
- Mix squash in small amount of water. Stir in and boil 1 minute.
- Cool to room temperature. serve with whipped cream.
