    Piirakka, salmon. (Lohipiirakka)

    List of Ingredients


    • 2 fresh salmon fillets,i pound each
    • 4 T melted butter
    • 1 recipe "Basic Karelian Pirraka"
    • 1 C cooked rice
    • 2 T chopped parsley
    • 2 T minced onion
    • 1/2 tsp salt
    • 5 hard cooked eggs, sliced
    • lemon juice
    • 1 egg, beaten


    Instructions


    1. brown the fillets quickly in 2 tablespoons of the butter. Do not cook them through. Remove from pan and chill.

    2. Prepare the pastry. Roll out half into an elongated oval about 16 by 6 inches. Place on a lightly greased cookie sheet.

    3. Combine the rice, remaining butter, parsley, onion and salt. Spread the mixture with in 2 inches of the edges. Arrange half of the egg slices over and add salmon. Sprinkle with lemon juice. Add another layer of egg slices.

    4. Roll out the second half of dough into a 16 by 6inch oval.Moisten the edges of lower crust and press the edges to seal. Brush with the beaten egg. Cut short slashes in the top crust for steam vents.

    5. Bake in a 400 degree oven for 25-30 minutes,or until golden. If it browns too quickly cover it with tinfoil and lower the heat.

    6. Serve hot.
