    Recipe Introduction


    Use as a base for many Puerto Rican dishes, such as beans , rice stews (asapao) soups and stews.


    List of Ingredients


    • 2 T vegetable oil
    • 1 T annatto seeds
    • 2 medium onions
    • 3-4 anaheim peppers
    • 8-10 cloves garlic, peeled
    • 1 and one half large bunchs cilantro
    • Pinch cayenne pepper
    • 3-4 ripe plum tomatoes, core and cut in chunks
    • 1 large red pepper, seeded and cut up
    • 1 tsp dried oregano
    • salt and pepper to taste


    Instructions


    1. In a frying pan, heat the oil and annatto seeds for about a minute, or until the oil turns a rich amber color. Strain the seeds from the oil and return the oil to the pan. Do this step if you are making non-vegan sofrito.
    2. Coarsely chop the onions and peppers in a food processor. With the motor running add the garlic, cilantro cayenne, tomatoes, red pepper and oregano. process until smooth. At this point you can freeze the raw sofrito for vegan cooking.
    3. You may want to add 1 ounce salt pork, chopped and 2 ounces smoked ham, chopped for non-vegan. Fry for 5 minutes over medium heat.add rest of ingredients and fry 5 minutes in the reserved annatto oil. season with salt and pepper.
    4. Freeze for later use if desired and use 1 tablespoon in yellow rice, black bean soup, or anything you want to spice up.


    Final Comments


    You can use cubinelle peppers if you can find them in place of Anaheims.
    You can use culantro (long coriander) and reduce the cilantro to 1 bunch.
    Bean variation: add 2 cans black beans and cook half an hour to meld flavors.
