    List of Ingredients


    • 2 and one half pounds of flank steak
    • kosher or sea salt
    • freshly ground black pepper
    • 1 medium onion, sliced
    • 3 T olive oil
    • one half C. sofrito
    • one quarter tsp. ground cumin
    • 2, 8 ounce cans spanish style tomato sauce
    • 1 and one half C. water
    • 3 T, coarsely chopped pimento stuffed olives
    • 2 bay leaves
    • 4 stalks celery, sliced
    • 3 thinly sliced carrots


    Instructions


    1. Heat the oven to 350 degrees. Pound meat until it's one quarter inch thick. Season with salt and pepper.
    2. Heat the oil in a large heavy skillet over high heat and cook meat until well browned on both sides.
    3. drain the fat and add the sofrito, salt and the cumin and boil. Stir in tomato sauce, water, olives and bay leaves.
    4. bring to a boil. Cover the pan and bake in the oven 2 and one half hours, or until the meat pulls apart easily with a fork.
    5. Cool meat and shred. Add carrots and celery. Reheat at a simmer until carrots are tender. Add water as necessary.
