    1 T oil
    1 tsp dark sesame oil
    1 lrg onion, quartered and sliced
    1/2 pound mung bean sprouts
    1 C small white mushrooms, sliced
    1-2 T soy sauce (to taste)
    pepper to taste
    1 dozen egg roll wrappers

    Recipe



    Heat the oils in a large skillet. add the onions, thinly sliced and saute over medium heat until transparent. Add the sprouts and mushrooms. Saute, covered, lifting lid to stir occasionally, until the sprouts are wilted, but crisp tender. Season with soy sauce and pepper. Remove from heat.
    Divide the mixture between 12 egg roll wrappers. Fold wrappers around stuffing like an envelope.
    Spray a large fry pan with cooking spray, or heat 2 T oil to medium hot. Cook the rolls on both sides until golden brown and crisp. Serve at once with tamari sauce, Chinese mustard and sesame seeds if desired.
