    Makes 2 generous servings or 4 small servings

    List of Ingredients




    1 tablespoon reduced-sodium soy sauce
    1 tablespoon oyster sauce
    2 tablespoons Chinese rice wine or dry sherry
    2 teaspoons rice vinegar
    1 teaspoon dark sesame oil
    8 ounces beef bottom round (or top round or petite sirloin), fat trimmed, frozen for 15 minutes
    1/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    2 tablespoons vegetable oil (divided)
    1 tablespoon finely minced ginger
    1 tablespoon finely minced garlic
    1 head bok choy, thinly sliced, stalks and leafy greens separated
    7 to 8 ounces fresh yakisoba noodles, or 6 ounces dried chow mein noodles, cooked according to packet instructions



    Recipe



    In a small bowl, combine the soy sauce, oyster sauce, rice wine, vinegar and sesame oil; set aside. Thinly slice the chilled meat against the grain into 1/4-inch-thick strips. Season with salt and pepper.

    Heat a wok or skillet over high heat. Drizzle 1 tablespoon of the vegetable oil down the sides of the wok and add the beef strips. Arrange the meat so that every strip lies flat and cook for 30 seconds, flip slices and cook on second side until the meat is just cooked through, about 30 seconds more. Transfer the meat to a small bowl.

    Return the wok to the stove and place over medium high heat. Add the remaining tablespoon of oil and the garlic and ginger. Stir-fry until the garlic is fragrant but not browned, 30 seconds. Add the white bok choy stalks (or firm vegetables such as cabbage, carrots or blanched broccoli) and stir-fry for 2 minutes. Add the noodles, bok choy greens (or tender vegetables such as bean sprouts) and soy sauce mixture and stir-fry until the noodles are heated through, 3 minutes. Return the beef and any accumulated juices to the wok and toss to combine. Serve immediately.
