    Basic Karelian Piirakkaa

    List of Ingredients

    1 C water
    1 tsp salt
    2 T melted butter
    1 1/2 C white flour
    1 1/2 C rye flour

    Recipe

    Mix water, salt and butter in a large bowl. Add white flour and beat until smooth. Blend in the rye flour. Turn out onto a floured board and knead until smooth. Shape dough into a roll 2 inches in diameter. Divide into 12 small pieces and dust with flour. Pat each into a round cake. Roll out into a circle 6-8 inches.
    Filling;
    Use mashed potatoes with milk and butter[perunapiirakkaa], or rice cooked with milk and butter.[Karjalan riisi piirrakkaa]
    Place 3 tablespoons filling on each round of dough. Spread to within 1 inch of edge. Fold 2 sides onto the filling, forming an oval shape, but leave 1 inch of filling exposed. Crimp the edges of dough. Place on a greased baking sheet. bake 400 degrees F. for 15 minutes, until lightly browned. Baste with milk and butter mixture twice during cooking and when ready to come out of the oven. Cover while hot with foil. Serve with egg butter.
    Egg butter; Hard boiled eggs mashed with butter.
    Cheese piirakkaa. Fill with cheese; 2 C cheddar, 2 C Swiss,2 T flour and dash white pepper. [Juustipirakkaa].
    Salmon; [Lohipiirakkaa].
    or fish rooster[Kalakukko].
    Carrot; [Karjalan pokkanapiirakkaa].
