    PURJOKEITTO (Leek soup)

    List of Ingredients

    five leeks
    two medium potatoes, peel and dice
    three cups rich beef broth
    one egg yolk
    one half cup cream
    chopped chives

    Recipe

    Put leeks, potatoes and one cup of the broth in a heavy pot. Simmer over low heat until potatoes are tender.
    Press through a strainer, or whirl in blender.
    Add remaining broth. Bring to a boil.
    Stir egg yolk into cream and add to the soup. stir until it thickens. Garnish with chives.

    Serves four
